  • 75g caster sugar

  • 1 teaspoon vanilla extract- the strong natural flavour of this extract is delicious

  • Pinch of salt

Method:

  1. Preheat your oven to 180°C (350°F) and line a baking dish with parchment paper.

  2. In a heatproof bowl, melt the dark chocolate over simmering water, stirring gently until smooth.

  3. In a separate bowl, whisk the eggs, caster sugar, and salt until fluffy. Add the melted chocolate and mix until combined.

  4. Stir in the walnuts, goji berries, orange zest, and vanilla extract.

  5. Pour the mixture into the lined baking dish and bake for 25-30 minutes or until set but still fudgy in the center.
